my favorite easy + cheap vegan breakfasts

YAAAAS, BREAKFAAAST. (That rhymes if you yell it in a really excited voice like I just did.)

I used to be that girl in high school skipping breakfast (and lunch) and just eating a huge meal when I got home from school and again at dinner, and calling it “health”. Well. Then I discovered the power of FOOD in the MORNING. Who woulda thought.

If you’re not already eating a solid breakfast, today… you start. Because I’m sharing with you my Top 5 easy AF plant-based breakfasts.

When I went vegan, I wasn’t sure what I was going to do without eggs or bagels w/ cream cheese or donuts. (I ain’t perfect.🍩) But I’d like to think I have it mastered.

At least, lazy broke college girl mastered.

All of these are going to take you less than 5 minutes, cost less than a latte at Starbucks, and taste like you could demolish every other kid on Chopped Junior. Probably.


Don’t knock it till you try it, buddy. Seriously, when my mom introduced me to overnight oats a few months back, my inner angsty-teenager was SO against such an old-lady meal. πŸ™…πŸΌπŸ™…πŸΌπŸ™…πŸΌ But this is one of the FEW dishes that can keep me full + movin’ + shakin’ for 6+ hours.

  • 1 c overnight oats
  • 1/2 c water
  • 2 tbsp chia seeds
  • splash of dairy-free vanilla coffee creamer (TRUST me on this one.)
  • topped with: bananas, blueberries, blackberries, strawberries, raisins, craisins, strawberry preserves

πŸ‘‰πŸΌprobiotics that aid digestion + help weight loss

$4 a day. That’s it.Β Ask me how YOU can get your hands on this bad boy. 😻 Because why limit yourself to just another protein shake?!

Potato Scramble.

You can’t go wrong with a steaming plate of veggies first thing in the morning, and throwing in some potatoes makes it not taste like a salad to start the day. Because who does that? No judgement, I’m really in awe.

Gluten Free Waffles.

Carbing up first thing in the morning is V-important for dat energy boost, fam πŸ”₯ and if I’m not feeling oats but still need to get my sweets in the morning, waffles are my next go-to.

I buy em gluten free because I feel so freakin’ E X T R A but you don’t have to. Gluten weighs me down so buying them without makes me not feel so heavy to start the day. (And you DON’T need a health foods store to find them GF, I buy these at Walmart!!)

Bagel w/ Avocado.

This is last on the list, need a 5 second balanced meal, I’m so late I might as well not even go, type of breakfast. The straight up carbs aren’t my fav, but if I throw a half an avocado on there and grab an orange, it’s a balanced breakfast.

Plant-based diets do not need to be expensive or time consuming or a challenge. Save a cow, a buck (or 10), save yourself.Β
